Put on the fire, in a bowl, water, oil and salt powder, when it boils add the flour and mix vigorously for about 2 ', then put the pan in the cold.

Meanwhile, prepare the cream: melt the butter, add the sugar, mix lightly and let it melt, then add the flour, mix and finally pour the milk and essence. Let it boil until it thickens like a pudding, but mix lightly so that it does not stick to the bottom of the pan. We put a lid (not to form a crust) and let it cool.

We return to the dough that has cooled and mix in the meantime, we incorporate eggs, one by one, until we finish them all.

Wallpaper two trays with baking paper, put dough in a pos and form the eclairs, round or elongated, leaving space between them.

Put in the preheated oven for 30-35 '.

We cut the cold eclairs in two and fill them with vanilla cream. On top, garnish with the icing I obtained by mixing (steamed) nutella with butter.
